Oven-Roasted Chicken with Vegetables, Apple, and Mandarin Orange Sauce

Ingredients for 3 people

  • 3 skin-on chicken thighs (removed from the refrigerator 15 minutes beforehand)
  • 2 leeks
  • 4 unpeeled garlic cloves
  • 1 parsnip
  • 2 carrots
  • 1 large white turnip
  • 1 firm, slightly tart apple
  • 2 small whole mandarins
  • 50 ml mandarin juice
  • 10 ml lemon juice
  • 10 ml honey
  • 5 ml soy sauce (optional)
  • 50 ml white wine
aceite de oliva extra virgen O-Live
  • Provençal herbs (rosemary, thyme, oregano, parsley, sage...)
  • Ground black pepper
  • Salt
  • Preparation

    1. Preheat the oven to 200°C. Clean the chicken, removing excess fat and any remaining feathers. Season with salt and pepper and sprinkle with Provençal herbs. Place the chicken in an ovenproof dish without crowding it.
    2. Cut the leek into thick pieces. Peel the carrot, turnip, and parsnip, and cut them into similar-sized pieces. Cut the apple into wedges with the skin on and remove the core. Add everything to the baking dish along with the whole, unpeeled garlic cloves.

    4. Mix the mandarin juice with the lemon juice, O-Live olive oil, white wine, honey, and soy sauce. Pour over the ingredients in the baking dish.
    5. Bake for 5 minutes, then lower the temperature to 180°C and continue baking for about 40–45 minutes, until the chicken is golden brown and crispy on the outside but juicy on the inside. Baste occasionally with the juices from the baking dish while cooking.

      Pro tip: If you want the skin to be crispier, raise the oven temperature to 220°C for the last 5 minutes. Let the chicken rest for a few minutes before serving so the juices can settle.
