Ingredients

  • 500g white fish fillets (hake or pomfret)
  • 1 cup flour
  • 1 cup sparkling water
  • 1 tsp salt
  • 1 tsp pepper
  • O-Live Olive Oil
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 8 corn tortillas

Instructions

  1. In a bowl, mix flour, sparkling water, salt, and pepper until smooth. Cut fish fillets into strips and dip them in the batter.
  2. In a large skillet, heat O-Live  over medium-high heat. Fry fish strips until golden and crispy. Remove and drain on paper towels.
  3. In a bowl, mix mango, red onion, red bell pepper, avocado, cilantro, and lime juice. Stir well to combine the ingredients.
  4. Warm corn tortillas in a skillet or microwave. Place crispy fish on each tortilla and top with mango salsa. Serve immediately.
