Lemon Blueberry Muffins

Lemon Blueberry Muffins



2 Tbsp Flax + 5 Tbsp Water

2 ½ Cups Oat Flour

1 tsp baking powder

½ tsp baking soda

⅓ cup O-Live Extra Virgin Olive Oil

1 Cup Vegan Yogurt

2-3 Tbsp plant-based milk

2 tsp vanilla

Zest of 1 large lemon

1 Cup frozen berries, tossed in 1 tbsp flour




  1. Mix together flax and water to make a flax egg and set aside
  2. Mix together all dry ingredients. To make oat flour simply blend an equal amount of oats
  3. Add in all wet ingredients and lemon zest, including flax egg
  4. Toss frozen berries in flour so they do not bleed into the muffin and then stir into the muffin mixture
  5. Bake at 400 F for 17-18 minutes. Let cool & enjoy!
