Ingredients:
2 Tbsp Flax + 5 Tbsp Water
2 ½ Cups Oat Flour
1 tsp baking powder
½ tsp baking soda
⅓ cup O-Live Extra Virgin Olive Oil
1 Cup Vegan Yogurt
2-3 Tbsp plant-based milk
2 tsp vanilla
Zest of 1 large lemon
1 Cup frozen berries, tossed in 1 tbsp flour
Instructions:
- Mix together flax and water to make a flax egg and set aside
- Mix together all dry ingredients. To make oat flour simply blend an equal amount of oats
- Add in all wet ingredients and lemon zest, including flax egg
- Toss frozen berries in flour so they do not bleed into the muffin and then stir into the muffin mixture
- Bake at 400 F for 17-18 minutes. Let cool & enjoy!
