Ingredients:

  • 2 Tbsp O-Live Extra Virgin Olive Oil
  • 2 Tbsp unsalted butter
  • 1/2 cup all-purpose flour, plus extra for coating
  • 2 cups whole milk
  • 4 oz Spanish ham, finely chopped
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • O-Live Extra Virgin Olive Oil for frying

Instructions:

  1. Heat the O-Live Extra Virgin Olive Oil and butter in a saucepan over medium heat. Once the butter is melted, add 1/2 cup flour and stir continuously for about 2 minutes to create a roux.
  2. Gradually add the milk to the roux, whisking constantly to prevent lumps. Continue to cook and stir until the mixture thickens into a béchamel sauce. Season with nutmeg, salt, and pepper.
  3. Stir in the Spanish ham into the béchamel and cook for another 2 minutes. Transfer the mixture to a dish and let it cool. Once cooled, refrigerate for at least 1 hour to firm up.
  4. Shape the chilled mixture into small cylinders. Roll each croquette first in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Heat O-Live Extra Virgin Olive Oil in a deep fryer or large skillet and fry the croquettes until golden brown on all sides.
