Christmas Sugar Cookies with Icing

Ingredients:
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- O-Live extra virgin olive oil for greasing
- 2 cups powdered sugar for icing
- 3-4 Tbsp milk for icing
- 1/2 tsp vanilla extract for icing
- Food coloring (optional for icing)
Instructions:
Step 1 Preheat your oven to 350°F. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
Step 2Â In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Step 3Â On a floured surface, roll out the dough to about 1/4 inch thickness. Use cookie cutters to cut out shapes and place them on a baking sheet greased with O-Live extra virgin olive oil. Bake for 8-10 minutes or until edges are just starting to turn golden. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Step 4Â For the icing, in a small bowl, mix together powdered sugar, milk, and vanilla extract until smooth. If desired, divide the icing into bowls and add food coloring. Decorate the cooled cookies with the icing.
Pro Tip: For a more professional finish, use a piping bag or a zip-top bag with a corner snipped off to apply the icing to the cookies.
