Rosemary Olive Oil Popcorn

Popcorn for decades has been the go to snack for those trying to lean out, but that has meant no butter, no salt and no FLAVOR. We were looking for a way to amp up our favorite healthy snack without all the junk, and this olive oil, garlic, and rosemary popcorn is downright addictive.

Everyone loves a big ol’ bucket of movie theater popcorn, and I am pretty sure no one asks for no “butter”, leaving us with a mystery in a bucket. What exactly goes into this butter flavoring? Partially hydrogenated soybean oil, beta carotene, buttery flavoring, & polydimethylsiloxane. Exactly we don’t know either..

Making flavored olive oils to top popcorn is extremely easy and then you know exactly what is in it. Starting with O-L!VE everyday extra virgin olive oil, high in polyphenols and a clean monounsaturated fat with good cholesterol. Then we are going to use fresh organic garlic and rosemary to flavor the olive oil and give the popcorn nice crunchy bits.

Be sure to fry the rosemary enough in the olive oil that is gets golden and crunchy, otherwise it will be a little medicinal. The other tip for this recipe is to not get the garlic too browned, or otherwise it will make your topping bitter. If you have picky eaters who avoid anything green or speckled just strain the olive oil before tossing the popcorn.

Ingredients:

  • 1/2 cup popcorn kernels
  • 2 cloves of garlic
  • 2 sprigs of rosemary
  • 1/2 cup O-L!VE everyday olive oil + 2 TBSP
  • Salt

Instructions

  • Mince the Rosemary and garlic fine, but keep separate. In a small skillet add 1/2 cup of Olive oil, and heat over medium heat. Add minced rosemary and cook for about a minute, then add the garlic. Once garlic is golden brown, remove from heat and set aside.
  • Heat 2 TBSP of olive oil in a large pot over medium high heat, add two kernels of popcorn to the oil. Place the lid on the pot. When those two kernels pop remove them, this is how you know the oil is hot enough. Add the remains popcorn kernels to the heated oil, place the lid on and shake the pot until you don’t hear pops anymore.
  • Remove from heat.
  • Toss popcorn and olive oil mixture in a large bowl and enjoy!
