Banana Bread Infused With Lemon & Olive Oil by @BaranBakery

This delicious banana bread infused with lemon & olive oil then swirled & topped with cinnamon and pecans will leave your mouth watering and any other banana bread in the dust. Created with O-Live & @baranbakery

INGREDIENTS

Banana Bread

  • 1/2 cup O-Live extra virgin olive oil
  • 3 ripe bananas
  • 2 eggs
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp. Baking soda
  • 1 tbsp. Vanilla extract
  • 1 lemon, zest and juice
  • 1/2 tsp. cinnamon 

Filling & Topping

  • 3/4 cup nuts, chopped
  • 3/4 cup brown sugar
  • 1 tsp. Cinnamon

 

DIRECTIONS

  1. Preheat oven to 325F. Grease & line a bread pan.
  2. Combine ingredients for filling in a medium bowl & set aside.
  3. Mash bananas until there's no more large chunks.
  4. Grate lemon zest and squeeze out juice out of one lemon; add it to the
    bananas & set aside.
  5. Combine flour, salt, baking soda & cinnamon in a bowl and whisk
    together.
  6. In a large bowl combine eggs, sugar & O-Live Extra Virgin Olive Oil;
    whisk vigorously for two minutes.
  7. Fold in dry ingredients until mostly combined.
  8. Add in banana & lemon mixture, folding until combined.
  9. Pour 2/3 of batter in the loaf pan.
  10. Spread half of the filling evenly on top of batter and then repeat another
    layer with the rest of the batter and filling.
  11. Bake for 75 minutes. Turn off oven & allow bread to sit for another 15
    minutes in the oven.
  12. Remove from the oven & allow to cool in the pan for about 30 minutes.
  13. Run a knife along the edges & remove bread from pan.
